When Epcot opened (as EPCOT Center) in the 80's, one of the big features and draws was the variety of restaurants, mostly in World Showcase. At the time, Magic Kingdom was a world of burgers and dogs with a few exceptions (hello, Harbor House), so having all the international options, including a number of table service restaurants, was huge.
Vegas has many more higher-end restaurants compared to WDW, but for the restaurants that are of similar-quality, such as V&A vs. Le Cirque in the Bellagio. Both have identical designations of 5 Diamond AAA and 1 Michelin star - $295 vs. $388 (excluding alcohol).

IMO the park hopper in order to eat at EPCOT is well worth it. I have been three times post covid for long trips and feel like the food at the EPCOT pavilions is far superior to most of the other Disney restaurants. On a trip with kids I love staying in the park "bubble" and walking through the different countries for dinner.
The restaurants in the Mexico pavilion at Epcot are also operated by third party vendors, the same ones who operate the Coronado Springs restaurants. Maybe ESPN Club too? OP - why do you ask? Even though some are owned/operated by third parties, some of them still adhere to Disney policies.
My understanding is that some of the Epcot restaurants are operated by external entities, not Disney. What are your favorite restaurants at Epcot (one table service credit) and why? I'm second guessing my dining reservations for our June trip and we haven't tried that many places at Epcot. We are staying at the Beach Club :)
I expect higher prices because I'm at Disney...hard to complain about a 50-80 sit-down meal with cocktails when a cardboard burger, coke and average fries run nearly $20. As for food in Epcot, I still consider it the best overall park for food selections and quality. While AK has Tiffin's which is good, there's not much in MK or DHS to compare.
