Then open the "Music". app if you're device is connected it'll show in "Devices", there's a button that says "Open In Finder" click on it and its like iTunes so you can restore/update and see storage and stuff. hope that's helpful. iTunes isn't supported on macOS 10.15 Catalina or later, i.e. Big Sur or Monterey.

Just to clarify a point made by green500; the reason that iTunes will not be installed on your iPhone is because you do not need iTunes on the phone. To play songs (music) on your phone, use the built-in Music app.
