    Jmido8, you have at least two options, you could download the English W7 SP1-Ultimate x86 (Media refresh) version: X17-59465.iso. or, if you are comfortable with editing the ISO before you burn it to DVD, you can delete ei.cfg from the ISO so that then it allows you to install any 64-bit version.
