Each episode should have artwork from TheTVDB etc. but it's a different type of art than the posters, shown at the season level to represent each episode. They are essentially screengrabs, but can be changed to user created art if you want.

TV Episodes in Collections. I don’t know how I missed this, but at least in the app.plex.tv interface I just figured out that you can put individual episodes of TV shows in collections. I always thought it was limited to entire series, but this is a welcome change whenever it took place. You can find it under the … on any episode.
