I redeemed 2800 vbucks on my epic account and selected xbox as that is where I want to use it. The card said it was for Xbox. My account shows that it has been redeemed but to Xbox 1, I have Xbox S and there was no differentiation on the epic redeem screen.

According to the official Epic Games page, when Vbucks do not appear in the account after being redeemed, you must log in to Fortnite on the same platform where you used your secondary code. If you are logged into the correct account, this will activate the redemption. Check any other accounts you have.
